Ingredients
  

  • 1 lb ground beef 80/20 or lean
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 bell pepper diced (optional)
  • 1 can 14.5 oz diced tomatoes, with juices
  • 1 cup beef broth
  • 1½ cups elbow macaroni uncooked
  • 1 tsp paprika smoked or regular
  • ½ tsp dried oregano or Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded cheese cheddar, mozzarella, or your choice – optional

Instructions
 

Brown the Beef

  • Heat a large skillet over medium-high heat. Add ground beef and break it up with a spatula. Cook for 5–6 minutes, until fully browned. Drain excess fat if needed.

Add Aromatics

  • Stir in diced onion, minced garlic, and bell pepper (if using). Cook for 2–3 minutes until the veggies are tender and fragrant.

Pour in Liquids & Seasoning

  • Add diced tomatoes, beef broth, paprika, oregano, salt, and pepper. Stir well and bring to a simmer.

Add Pasta

  • Stir in uncooked macaroni. Cover and simmer on low for 10–12 minutes, stirring occasionally. Add more broth if the liquid reduces too quickly.

Melt the Cheese (Optional)

  • Once the pasta is cooked, sprinkle shredded cheese over the top. Cover for 1–2 minutes to melt. Stir gently to combine.

Final Taste & Serve

  • Taste and adjust seasoning. Garnish as desired and serve hot!
